RECIPE: Blueberry Smoothie Bowl

I love bowls! I can eat them for breakfast, lunch, and dinner. There's just something about throwing everything into a bowl that satisfies the lazy in me. It also satisfies the country girl in me because I can eat ANYTHING in a bowl with a spoon. So... there it is.


I was searching for a simple smoothie bowl and ran across this baby on AllRecipe.com. Because blueberries are at the top of my super short list of fruits I eat, I thought they would be the perfect fruit to kick off my recipe section. Yes, I'm about to start sharing recipes that are nutritious but super quick and easy to make. Besides the way my life is set up, planning nutritious, quick, and easy meals are a must.


Let's start with what you will need.


Ingredients

Smoothie:

  • 1 cup frozen blueberries

  • ½ banana

  • 2 tablespoons water

  • 1 tablespoon cashew butter

  • 1 teaspoon vanilla extract

Toppings:

  • ½ banana, sliced

  • 1 tablespoon sliced almonds

  • 1 tablespoon unsweetened shredded coconut


This is me being Extra:

You can also add:

  • Strawberries


  • Pomegranate seeds


  • Chia or flax seeds


  • Cacao nibs or curls


Directions
  1. Blend blueberries, 1/2 banana, water, cashew butter, and vanilla extract together in a blender until smooth; pour into a bowl.

  2. Top smoothie with sliced banana, almonds, and coconut.
